Chef masterclass for students

Borders College second and third year catering students were recently treated to a cookery Masterclass by local chef Kenny Coltman from Coltman’s Restaurant, Peebles.

Kenny who started his catering career as a student at Borders College in Hawick has worked in top Kitchens all over the UK and Europe before returning to the Borders to open his first Restaurant in June 2011.

Kenny started the day off with the preparation of his ingredients, many of them sourced locally here in the Borders. He emphasised the importance of using local produce, being able to utilise as much as you can from them to avoid waste and to get as good a return from your dishes in the restaurant.

Kenny made a Warm Salad of Lobster with Hollandaise Sauce and Roulade of Guinea Fowl with a Spinach Pancake and Braised Red Cabbage.

The students were able to ask Kenny questions while he prepared the dishes about his career and also the dishes that he liked to cook. The students found the Masterclass very informative and worthwhile and were able to taste the finished dishes and make comments to Kenny.

“This is the first Masterclass that Kenny has given at Borders College, it was a great success and the students gained so much from the experience, we hope that he will be able to do more Masterclasses in the future.” Commented Vicky MacDonald, Catering Programme Leader at Borders College.
