The course comprises of 4 mandatory units and 8 optional units. The units cover the following areas: Maintain Health and Safety in Hospitality, Work effectively as part of a team, Maintain and handle knives and Maintain food safety in a kitchen environment.8 optional units can be chosen from a range of options suited to the work place. To achieve the Modern Apprenticeship candidates must also achieve 5 core skills at SCQF Level 3 in Communication, ICT & Numeracy and SCQF Level 4 in Working with Others and Problem Solving. The candidate also has to pass one further accredited, legislatively and nationally recognised short course at a suitable level and appropriate to the job role. E.g. Food Hygiene Certificate excluding Front Office and Housekeeping, Health & Safety at Work Certificate or a Scottish Alcohol Certificate for staff working on drink service routes within Licensed Premises.


At your workplace - our Borders College Assessor will guide you every step of the way, visiting regularly and providing personalised tutoring and support. College premises in the Borders & Edinburgh and other venues are often used for meeting up, or to access computer and library facilities. Start dates are all year round. We work with people individually therefore start dates are negotiable.
